Ingredients

For the brownies

  • ½ cup unsalted butter, melted
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ½ teaspoon vanilla extract
  • ½ cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ¼ teaspoon salt
  • ¼ cup chocolate chips (optional)

For the cream cheese frosting

  • 4 oz cream cheese (softened)
  • 2 tablespoon unsalted butter (softened)
  • 1 cup powdered sugar
  • ½ teaspoon vanilla extract

Instructions

  • Preheat your oven to 350°F (175°C). Grease an 8x8 baking pan with cooking spray and line it with parchment paper for easy removal.
  • In a large mixing bowl, mix the melted butter, granulated sugar, and brown sugar until smooth.
  • Add the eggs and vanilla extract, and mix until fully combined.
  • Sift in the unsweetened cocoa powder, flour and salt. Stir until the batter is smooth and fully incorporated.
  • Fold in the chocolate chips (optional).
  • Pour the brownie batter into the prepared pan, spreading it evenly.
  • Bake in the preheated oven for 20-25 minutes. Check with a toothpick inserted into the center— it should come out with moist crumbs for fudgy brownies.
  • Let the brownies cool completely in the pan before frosting.

For the cream cheese frosting

  • In a large bowl, beat the softened cream cheese and butter using an electric mixer or hand mixer until smooth and creamy.
  • Add the vanilla extract and gradually mix in the powdered sugar until you get a smooth, creamy consistency.
  • Once the brownies are cool, spread the cream cheese frosting evenly over the top. Slice into squares and serve!

Notes

Storage:
Store the brownies in an airtight container in the fridge for up to 5 days. For longer storage, you can freeze them for up to 3 months. Make sure to wrap each brownie in plastic wrap before freezing, and thaw in the fridge before serving. Avoid storing them at room temperature due to the cream cheese frosting.
