Ingredients

  • ½ cup unsalted butter, melted and hot
  • 1 tablespoon vegetable or olive oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup all purpose flour
  • ¼ teaspoon salt
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon instant espresso powder (optional)
  • ¼ cup chocolate chips (optional)

Instructions

  • Preheat your oven to 350°F (175°C). Line an 7 or 8 inch square baking pan with parchment paper and set aside.
  • In a large mixing bowl, combine the melted hot butter and oil. Add the granulated sugar and whisk until well combined.
  • Add the eggs and vanilla extract. Beat about a minutes after adding eggs.
  • Add the flour, cocoa powder, and salt to the wet mixture, stirring until just combined. Be careful not to overmix.
  • Add espresso powder and chocolate chips (optional).
  • Pour the batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
