No bake strawberry cheesecake bars without gelatin
These no bake strawberry cheesecake bars are super easy to make. They're refreshing and perfect for vegetarians because there are no eggs or gelatin used in the recipe.
In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Stir until well mixed.
Press the mixture firmly into the bottom of an 8x8-inch pan to form an even crust. Refrigerate for at least 1 hour to set.
Make the Strawberry Filling
Blend fresh strawberries in a food processor or blender until smooth.
Strain the puree through a fine sieve to remove seeds, then set aside.
Prepare the Cheesecake Mixture
In a separate bowl, beat softened cream cheese, sugar, and vanilla extract until smooth and creamy.
Add the strained strawberry puree and mix until fully combined.
Whip the Cream
In another bowl, whip the heavy cream until stiff peaks form.
Combine & Assemble
Gently fold the whipped cream into the strawberry cheesecake mixture until smooth and fluffy.
Spread the cheesecake filling evenly over the chilled crust, smoothing the top with a spatula.
Freeze & Serve
Place the pan in the freezer and let it set for at least a few hours, or until firm.
Once set, slice into 12 equal bars.
Garnish with whipped cream and fresh strawberries before serving.
