Preheat the oven to 350F/176C. Line a cookie sheet with parchment.
In a large bowl, cream the softened butter and sugar until light and fluffy. scrape down the sides.
Mix in flour. knead until the dough forms.
Roll dough ¼-inch thick on a surface dusted with flour. cut out rounds or your favorite shaped cookies.
Bake the cookies for 16-18 minutes or until pale golden in color.
Cool on a wire rack.
