  • 2 cups (300g) pitted medjool dates
  • 6 tablespoon unsweetened cocoa powder
  • 2 teaspoon baking powder
  • 3 large eggs

Instructions

  • Preheat the oven at 350°F (175°C). Line a 6-inch baking pan with parchment paper.
  • If your dates are not already pitted, remove the pits and add them to a blender or food processor. Blend until smooth, making sure there are no large chunks. This may take some time, especially if the dates are firm. A well-blended date paste is important for the cake’s texture.
  • Add unsweetened cocoa powder, eggs, and baking powder to the blended dates. Blend again until everything is well combined and smooth. The batter will have a thick consistency, so you may need to scrape down the sides of the blender to ensure even mixing.
  • Pour the batter into the prepared pan and spread it evenly. Bake in a preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cake cool in the pan before removing it. You can enjoy the cake plain or add your favorite frosting. I made my own frosting, but you can use any frosting you like!

  • Batter Consistency: The batter will be thick, which is normal. Use a spatula to spread it evenly in the pan.
  • Baking Time: Ovens may vary, so check the cake at 30 minutes by inserting a toothpick in the center. It should come out clean or with just a few crumbs.
  • Cooling: Let the cake cool completely before removing it from the pan to prevent breaking.
