In a large bowl, combine all the ingredients: creamy peanut butter, honey (or maple syrup), ground flaxseeds, instant oats, and dark chocolate chips. Stir everything together until well mixed.
Refrigerate the mixture for about 15–20 minutes to help it firm up.
Once chilled, use your hands or a spoon to roll the mixture into small bite-sized balls.
Place the energy bites on a baking sheet or plate lined with parchment paper. Refrigerate for an additional 10–15 minutes to set, then enjoy! Store any leftovers in an airtight container in the fridge.
