Ingredients

  • 1 cup oats
  • ¼ cup almonds
  • ¼ cup peanuts
  • ¼ cup sunflower seeds
  • ¼ cup pumpkin seeds
  • ¼ cup dried cranberries or raisins
  • 1 tablespoon chia seeds
  • pinch of salt
  • 2 tablespoon coconut oil, melted
  • cup honey or maple syrup
  • ½ teaspoon vanilla extract

Instructions

  • Preheat the oven to 350F and line a cookie sheet with a parchment paper.
  • In a large bowl add oats, almonds, peanuts, sunflower seeds, pumpkin seeds, chia seeds and salt. Mix to combine.
  • Add coconut oil, honey and vanilla extract. Mix everything until moisten and fully combined.
  • Place a cookie ring on the tray, then spoon 2 tablespoon of granola mixture into a cookie ring and press down firmly.
  • Bake for 20-22 minutes. Let them cool completely.
  • Once your cookies are cool, store them in an airtight container for up to a week.
