Preheat the oven to 350F and line a cookie sheet with a parchment paper.
In a large bowl add oats, almonds, peanuts, sunflower seeds, pumpkin seeds, chia seeds and salt. Mix to combine.
Add coconut oil, honey and vanilla extract. Mix everything until moisten and fully combined.
Place a cookie ring on the tray, then spoon 2 tablespoon of granola mixture into a cookie ring and press down firmly.
Bake for 20-22 minutes. Let them cool completely.
Once your cookies are cool, store them in an airtight container for up to a week.
