Healthy Coconut and Date Balls

Ingredients

  • cup almonds
  • 10 pitted medjool dates
  • ½ cup unsweetened shredded coconut
  • 1 tablespoon coconut oil
  • 1 tablespoon water

Instructions

  • Add almonds to a food processor and pulse until finely ground.
  • Add pitted Medjool dates and shredded coconut, coconut oil and tablespoon of water. Blend again until a soft dough forms.
  • Scoop small portions and roll into balls using your hands. Roll each ball in extra shredded coconut to coat evenly.
  • Chill in the refrigerator for 15–20 minutes before serving or storing.

Notes

  • Use soft Medjool dates for best results. If dates are dry, soak in warm water for 5–10 minutes and drain well.
  • Blend almonds until finely ground but stop before they turn oily.
  • Add water only if needed to help the mixture come together. Start with small amounts.
  • Roll balls evenly for uniform size and chilling.
  • Chill for 15–20 minutes before serving to help them firm up.
