Add almonds to a food processor and pulse until finely ground.
Add pitted Medjool dates and shredded coconut, coconut oil and tablespoon of water. Blend again until a soft dough forms.
Scoop small portions and roll into balls using your hands. Roll each ball in extra shredded coconut to coat evenly.
Chill in the refrigerator for 15–20 minutes before serving or storing.
