Dates add natural sweetness while coconut gives texture and flavor, so there is no need for added sugar. Ingredient notes
- Almonds: Use raw or roasted almonds. You can blend them fine for a smooth texture or leave them slightly coarse for some crunch. Almond flour also works if you want a softer bite.
- Medjool Dates (pitted): Medjool dates are best because they are naturally soft and sweet, which helps bind the mixture. If your dates are dry, soak them in warm water for 5–10 minutes and drain well before using. You can also use Deglet Noor dates, but they may need soaking.
- Shredded Coconut: Unsweetened shredded coconut is recommended to keep the recipe naturally sweet. Fine or medium shred both work well, depending on the texture you prefer.
- Coconut Oil: Coconut oil helps everything come together. Use melted coconut oil. If needed, you can substitute with almond butter or any neutral oil.
How to make Healthy Coconut and Date Balls
- Add almonds to a food processor and pulse until finely ground.
- Add pitted Medjool dates and shredded coconut, coconut oil and tablespoon of water. Blend again until a soft dough forms.
- Scoop small portions and roll into balls using your hands. Roll each ball in extra shredded coconut to coat evenly.
- Chill in the refrigerator for 15–20 minutes before serving or storing.

- Dates: Medjool dates should be soft and sticky. If they feel firm, soak them in warm water for 5–10 minutes, then drain and pat dry before using. This helps the balls hold their shape.
- Almonds: Blend almonds until fine but not oily. Over-processing can turn them into almond butter and change the texture.
- Texture Fix: If the mixture does not come together, add coconut oil 1 teaspoon at a time. If it becomes too soft, mix in extra shredded coconut or ground almonds.
