Ingredients note
- Medjool Dates-Use soft, pitted Medjool dates as they blend easily and give the truffles their natural sweetness and fudgy texture. If your dates are dry, soak them in warm water for a few minutes before using.
- Unsweetened Shredded Coconut-Unsweetened shredded coconut helps balance the sweetness and adds texture without extra sugar. It also makes the truffles more filling and wholesome.
- Dark Chocolate Chips or Melting Candy-Use dark chocolate chips or chocolate melting candy for coating the truffles. Dark chocolate adds rich flavor, while melting candy gives a smooth, glossy finish.

3-ingredient chocolate date truffles
Ingredients
- 1 cup(120g) pitted medjool dates
- 1 ½ cup(120g) unsweetened shredded coconut
- 1 cup (120g) dark chocolate chips, melting wafers or chopped dark chocolate
Instructions
- Remove the pits from the Medjool dates.
- Add the pitted dates and shredded coconut to a blender or food processor. Blend until smooth and well combined.
- Using your hands, form even-sized balls from the mixture. If the mixture is sticky, lightly grease your hands with oil or dampen with a little water.
- Place the date balls in the refrigerator to firm up while you prepare the chocolate.
- Place dark chocolate in a microwave-safe bowl. Heat in 15–30 second intervals, stirring with a spatula between each interval, until the chocolate is fully melted and smooth. If the chocolate is too thick, you can add a small amount of coconut oil to thin it out.
- Dip each date ball into the melted chocolate, then place it on a lined baking sheet to prevent sticking.
- Sprinkle with festive or decorative toppings if desired.
- Refrigerate until the chocolate is firm.
