Lemonies ( Lemon Brownies)

Lemon brownies, also known as lemonies, are a delicious and tangy twist on traditional chocolate brownies. They are made with a lemon-infused batter and delicious lemon glaze on top.

These lemon brownies are very light and refreshing, making them a popular choice for warm weather or as a sweet finish to a meal. The recipe typically includes ingredients such as butter, flour, sugar, eggs, and lemon juice. If you love lemons, you will love this easy recipe.

INGREDIENTS:

  • All purpose flour:
  • Sugar:
  • Salt: to balance the flavor
  • Butter: unsalted softened butter
  • Eggs:
  • Lemon juice and lemon zest:
  • Powdered sugar:

HOW TO MAKE LEMON BROWNIES:

  • Preheat oven to 350F or 180 C. Grease or line an 8" square baking pan.
  • In a large bowl, whisk together the flour, sugar & salt. Mix in the softened butter.
  • In a separate bowl, whisk the eggs, lemon juice and lemon zest. 
  • Pour into the flour mixture and whisk until smooth and well combined.
  • Pour into the baking pan and bake for 25 minutes or until starting to turn golden.
  • Allow to cool completely before pouring the glaze.  
  • Combine the glaze ingredients in a bowl and stir well until smooth.
  • Spread glaze over brownies and let set. Cut in squares!

  1. Room Temperature Ingredients: Ensure that your eggs and butter are at room temperature before you start baking. This helps in achieving a smoother batter consistency and better incorporation of ingredients.
  2. Zesting Lemons: When zesting lemons for the recipe, be careful to only scrape the outer yellow skin. The white pith beneath is bitter, so avoid grating it into your mixture.
  3. Mixing Technique: When combining the wet and dry ingredients, aim for a smooth batter but avoid overmixing. Overmixing can result in a tougher texture.

  6. Glaze Consistency: If the glaze seems too thick, you can adjust the consistency by adding a little more lemon juice. If it's too runny, sprinkle in some powdered sugar until you reach the desired thickness.
  7. Cutting Tips: For clean and neat squares, use a sharp knife. It often helps to wipe the knife with a damp cloth between cuts to ensure clean edges.
  8. Storage: Lemon brownies can be stored in an airtight container at room temperature for a few days. If you plan to keep them longer, consider refrigerating them, but bring them to room temperature before serving for the best taste.

Ingredients

For Brownies :

  • ¾ cup all purpose flour
  • ¾ cup granulated sugar
  • ¼ teaspoon salt
  • ½ cup butter, softened
  • 2 eggs, room temperature
  • 2 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest, grated

Instructions
