These cookies are my favorite as they are quick to make and taste absolutely delicious. These cookies have a slightly crisp and melt in your mouth texture just like a shortbread cookies.
Vegan, gluten free and dairy free these will be your favorite go-to cookies for any occasion. The dough takes only about a minute and shaping balls takes about 5 minutes.
INGREDIENTS:
- Almond flour: I used finely ground blanched almond flour.
- Maple syrup: sweetened the cookies and bind them together.
- Coconut oil: melted
HOW TO MAKE ALMOND COOKIES:
- Preheat oven to 325F° (160C°). line a cookie sheet with parchment paper or silicon baking mat.
- In a large bowl combine almond flour, melted coconut oil and maple syrup. knead with hands to form a smooth dough.
- Scoop out a tablespoon of dough and roll into a ball.
- Place the ball into the lined cookie sheet. flatten each cookie with the help of fork.
- Bake for 10-12 minutes.
- Let them cool for 5 minute on the cookie sheet before transferring on a cooling rack to cool completely.
